Valentine +1

The “wine o’clock” 115 catalogue is brimming with gems. Some are safe bets, others treasures for lovers of rare and iconic wines. Lots designed for smart bidding, where a single purchase can fill your wine cellar.

With Valentine’s Day approaching, we envisioned a dinner capable of charming your +1, your partner, or your future other half! We could have taken the playful route: winking at cuvée names. A Grande Dame (Lot 16), a Charmes-Chambertin from Perrot-Minot (Lot 151), or even Les Valentines (Lot 264). Even a Laurent-Perrier Grand Siècle (Lot 5) evokes the passing years in a union. Fun, of course, but after the first smile, the effect can quickly grow repetitive.


Le catalogue de la “wine o’clock” 115 regorge de pépites. Certaines sont des valeurs sûres, d’autres des trésors pour les amateurs de raretés et de vins iconiques. Des lots pensés pour enchérir intelligemment, où une seule mise peut remplir votre eurocave.

À l’approche de la Saint-Valentin, nous avons imaginé un dîner capable de séduire votre +1, votre moitié, ou votre moitié en devenir ! On aurait pu choisir l’option ludique : les clins d’œil de noms de cuvées. Une Grande Dame (Lot 16), un Charmes-Chambertin de Perrot-Minot (Lot 151) ou encore Les Valentines (Lot 264). Même un Laurent-Perrier Grand Siècle (Lot 5) évoque les années qui s’additionnent dans une union. Amusant, certes, mais après le premier sourire, l’effet peut vite devenir redondant.

So it’s better to pull out all the stops, wine-geek style, to create surprise and wonder. This option remains a safe choice: the selected winemakers win the approval of the most discerning enthusiasts every year. Imagine opening the evening with a Clos de la Néore by Edmond and Anne Vatan (Lots 31–35). A Sauvignon Blanc, but far from conventional. Its aromas go beyond the varietal: fine herbs balanced by subtle fennel, yellow fruits, candied lemon, roasted pineapple—or perhaps passion fruit. Pair it with a ceviche prepared with just a touch of passion, and you create a subtle echo with the wine while reinforcing the evening’s theme…


Alors, mieux vaut sortir le grand jeu, façon wine geek, pour créer la surprise et l’émerveillement. L’option n’en demeure pas moins sûre : les vignerons sélectionnés remportent chaque année l’adhésion des amateurs les plus exigeants. Imaginez l’ouverture du bal avec un Clos de la Néore d’Edmond et Anne Vatan (Lots 31 à 35). Un Sauvignon blanc, mais loin d’être conventionnel. Ses arômes dépassent le variétal: herbes fines balancées par un fenouil subtil. Des notes de fruits jaunes également citron confit, ananas rôti : ou plutôt fruit de la passion. Associez-le à un ceviche travaillé avec un peu de passion justement, vous créez ainsi un écho subtil au vin, tout en affirmant la thématique de la soirée…

The rest of the meal should remain coherent. Lièvre à la Royale, however sublime, might feel slightly off. To maintain a sense of controlled tension and the unusual, why not choose a Savagnin, François Rousset-Martin’s Oxy-More (Lot 38)? Its toasted, nutty notes pair beautifully with a ravioli, a rich jus, or a reduced sauce, offering roundness without losing elegance.


La suite du repas doit rester cohérente. Le Lièvre à la Royale, aussi sublime soit-il, sonnerait un peu faux. Pour rester sur une tension maîtrisée et l’insolite, pourquoi ne pas choisir un Savagnin, l’Oxy-More de François Rousset-Martin (Lot 38) ? Ses notes de noisette et toastées se marient avec une raviole, un jus corsé ou une sauce réduite, offrant rondeur et gourmandise sans perdre l’élégance.

If you prefer a safe bet, nothing beats a refined roasted pigeon served with a Chambolle-Musigny Les Charmes from Domaine Ponsot (Lot 57). Elegant Pinot, sensual texture, and tangy cherry notes: a pairing that always works and stays on theme. For those seeking a slightly more robust red yet practical option, duck remains an elegant all-rounder. Without jumping straight to a “Canard au Sang” à la Escoffier, (which one of you have a poultry press anyway?) a lightly seared magret with a gentle balsamic reduction would match ripe black fruits, subtle tobacco notes, and the soft spices of the Montebello Ridge (Lot 297).


Si l’on préfère la sûreté, rien ne vaut un plat racé : un pigeon rôti servi avec un Chambolle-Musigny « Les Charmes » du Domaine Ponsot (Lot 57). Pinots élégants, texture sensuelle et notes de cerise mordante : un accord qui fonctionne à coup sûr et toujours dans le thème. Pour ceux qui souhaitent un vin rouge à peine plus dense mais pratique, le canard reste un passe-partout élégant. Sans parler tout de suite d’un canard au sang façon Escoffier (qui possède une presse à volaille dans sa cuisine ?), un magret un peu grillé travaillé avec une réduction légère balsamique, s’accorderait aux fruits noirs mûrs, aux notes subtiles de tabac et aux épices douces du Montebello Ridge (Lot 297).

And to finish the evening with flair, nothing beats the Sine Qua Non Mr. K Vin de Paille (Lot 293). Passerillé Sémillon with a syrupy texture, yet kept lively by still-present acidity, finishing on dates, maple syrup, and malty notes. A simple dessert would suffice: a baked apple, candied and caramelized, finished in the wood fire to impart a whisper of smoky notes. Indulgent? Absolutely—but ending the evening by the fireplace would certainly earn extra points.

A word to the wise…


Et pour conclure la soirée avec panache, rien de mieux que le Sine Qua Non, Mr. K Vin de Paille (Lot 293). Sémillon passerillé à la texture sirupeuse mais soutenue par une acidité encore présente, finale sur dattes, sirop d’érable et notes maltées. Un dessert simple suffirait : une pomme au four confite et caramélisée, toute simple mais dont on aurait terminée la cuisson dans le feu de bois pour y apporter des notes à peine boisées. Là on délire totalement mais finir la soirée au coin d’une cheminée vous marqueriez encore des points.

PS: The “Vintage chic” lovers should also note the Champagne Henriot, Cuvée Perpétuelle 38 V5 (Lots 11–13). Its original box, with faceted mirrors very ’80s, is a stylish and whimsical way to kick off the evening.
